So I went with the following setup:
Processor: Intel Core i7-3770K 3.50Ghz, 8MB L3 Cache
Boot: 128GB 2.5" 6Gb/s Solid State Drive (SSD), Read: 550MB/s Write: 520MB/s
Data: WD Black (WD2002FAEX) 2000GB (2TB) SATA3
Memory: 16GB (2x8GB) DDR3 1866MHz CL10 Dual Channel Kit
Cooling: Corsair Hydro Series H60 2013 High Performance Liquid CPU Cooler
Motherboard: ASUS P8Z77-V Socket 1155 Intel Z77 Chipset
PSU: 750W Corsair Builder series modular power supply
Case: Fractal Design Core 3000

Kept my old video card for the moment, I wasn't at the point that it didn't run things I wanted to play so I saved the money for food

Setup from the start with Win8 that SSD drive should absolutely fly. Boot time must be pretty impressive as well. Mind you with Win 8 you will rarely need to shut it off completely.

Not a lot of high power gaming done on it, but it hasn't slowed down on anything I've thrown at it.
Overclocked the 3.5Ghz cores to 4.0Ghz with only a marginal temperature increase and no stability issues.
It's got enough juice to be running the main OS (including gaming) while still running a full time CentOS 6 linux install in the background as a virtual machine.
It makes I happy
